Role IntroductionThe Dining Performance Manager – Hong Kong sits under the Customer Experience and Design Department mainly responsible for leading the operational and dining commercial relationship between Cathay Pacific and Cathay Dining to ensure the Cathays primary catering partner consistently delivers safe, reliable and high-quality service from Hong Kong. Acting as the Cathay’s operational account lead for Cathay Dining, you will be responsible for overseeing supplier performance, operational readiness and contractual delivery while working closely with internal teams to ensure alignment across culinary development, operational performance and commercial objectives. You will be also responsible for coordinating Cathay’s engagement with Cathay Dining on major operational and transformation initiatives to ensure these initiatives support operational resilience, customer satisfaction and commercial value for both organizations.
Key Responsibilities- Serve as Cathay’s primary operational relationship manager with Cathay Dining to ensure Cathay Dining consistently delivers operational performance in line with Cathay’s catering standards, safety requirements and contractual obligations
- Oversee supplier performance across operational reliability, loading accuracy, food specification adherence, equipment handling, safety compliance and service delivery from Hong Kong
- Lead the design, negotiation and ongoing management of operational service level agreements and performance frameworks governing the Cathay-Cathay Dining partnership (ensuring a balanced focus on operational robustness, customer satisfaction and commercial efficiency); and work closely with Procurement team to support the renegotiation and evolution of the commercial agreement between Cathay Pacific and Cathay Dining
- Ensure operational considerations are fully reflected in commercial frameworks and contractual arrangements with Cathay Dining; and monitor and analyze Cathay Dining performance across operational, service and cost-related metrics, ensuring transparency and early identification of risks while recognizing Culinary ownership of food costs
- Maintain oversight of Hong Kong catering operational costs and performance indicators, ensuring alignment with the broader Dining and Hospitality budget framework while recognizing Culinary ownership of food costs
- Lead regular performance and governance meetings with Cathay Dining leadership to review operational performance, service quality and improvement initiative; and ensure Cathay Dining kitchens are operationally ready to launch new menus, working closely with the Culinary Design team
- Coordinate with Culinary Design to ensure menus developed for Hong Kong are deliverable and executed consistently to specification; and collaborate with closely with other Dining Performance Managers to ensure consistent supplier management practices, performance frameworks and operational standards across the global catering network
- Monitor supplier adherence to approved food specifications and operational standards, escalating persistent issues through appropriate governance channels
- Ensure Cathay Dining operational changes or transformation initiatives are implemented without disruption to catering operations or passenger service delivery; and identify operational risks affecting the Hong Kong catering operation and develop mitigation strategies to ensure continuity of services; and lead the coordination of Cathay operational responses to disruptions or incidents affecting Cathay Dining operations
- Ensure effective communication and alignment between Cathay Dining operational teams and relevant Cathay departments; and provide structured reporting to senior management on Cathay Dining performance, operational
risks and improvement initiatives
Requirements- University education in a commercial discipline
- A minimum of 7 years relevant working experience in the airline industry (preferably catering operations planning, logistics and project management) or a high performer with a robust commercial background
- Working knowledge of quality assurance techniques (such as Hazard Analysis and Critical Control Points) and auditing preferred
- Solid experience and knowledge in the airline business, processes and procedures
- Strong command of both written and spoken English and Chinese, Mandarin and highly developed influencing and negotiation skills
- Strong people management, communication and interpersonal skills
- Good literacy in Computer and Microsoft Office
- Strong project management skills
- Relevant skills in cost and budget, procurement and negotiations, inventory planning and management, galley loading planning, and operations planning
